Tell us about your menu
Our menu is reflective of seasonality and availability, we change the menu every day to offer our guests a constantly evolving choice, and this ensures completely fresh produce and creative freedom.
What dish on your menu would you recommend?
As our menu never sits still it's hard to say. Recent highlights have been Elton estate venison, Goosnargh duck and the onset of the winter vegetables, what I would recommend though is to simply enjoy dining out!
What fired your interest in cooking?
Living on the coast in St. Anne's, I absolutely love the sea and all it has to offer, the freedom to create and the pleasure you receive from making someone's evening or special occasion.
What advice would you give to a novice?
Start with simplicity and allow your confidence to grow, find out what you enjoy to cook and work on how to improve that, don't follow trends!
Most memorable meal?
It was at a place called Jacks Bistro, it was my birthday and also the day I found out we were expecting our baby boy and it was at this meal we announced it to my family.
Which chef has been your inspiration?
I appreciate all the top flight chefs but it's all the people you work with everyday and in the past that leave a lasting effect on you, the young and inventive people who really do cook for you.
